FRESH GUACAMOLE

Preheat your oven to 400°F (200°C). Season the shrimp with salt and pepper. Wrap each shrimp with a slice of bacon and secure with a toothpick.

Prepare the Shrimp

Place the bacon-wrapped shrimp on a baking sheet. Bake in the preheated oven for about 15-20 minutes, or until the bacon is crispy and the shrimp is cooked through.

Cook the Shrimp

In a medium bowl, mix the softened cream cheese, minced garlic, chipotle peppers, lime juice, salt, and pepper until smooth and creamy.

Make the Sauce

Warm the tortillas in a skillet or microwave. Place 2-3 bacon-wrapped shrimp on each tortilla and drizzle with the creamy chipotle sauce. Garnish with chopped cilantro.

Assemble Tacos

Serve immediately while warm with additional lime wedges on the side.

In a large skillet, heat olive oil over medium heat. Add onions, bell peppers, and mushrooms. Sauté for about 5-7 minutes until the vegetables are tender. Season with salt and black pepper.

Sauté the Vegetables

In a large bowl, combine the sautéed vegetables with the shredded carne asada and shredded Monterey Jack cheese. Mix well.

Combine Filling

Lay an egg roll wrapper on a clean surface, with a corner pointing towards you. Place about 2 tablespoons of the filling mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold the sides in and roll tightly, sealing the top corner with a little water.

Prepare Egg Rolls

In a deep skillet or fryer, heat oil to 350°F (175°C). Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Fry the Rolls

Serve hot with your favorite dipping sauce.
