For the Skewers

    Prepare the Marinade

    In a bowl, combine olive oil, ground cumin, ground coriander, paprika, cinnamon, salt, black pepper, and lemon juice. Mix well to form a marinade.

    Marinate the Pork

    Cut the pork tenderloin into 1-inch cubes and add to the marinade. Toss to coat evenly. Cover and let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

    Prepare Skewers

    Soak wooden skewers in water for 30 minutes to prevent burning. Preheat the wood-fired grill.

    Skewer the Pork

    Thread the marinated pork cubes onto the soaked skewers. Ensure they are evenly spaced.

    Grill the Skewers

    Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally until the pork is cooked through and has nice grill marks.

For the Mediterranean Pico

    Chop the Vegetables

    Dice the tomato, cucumber, and red onion into small pieces. Finely chop the fresh parsley.

    Mix the Pico

    In a bowl, combine the diced tomato, cucumber, red onion, and parsley. Drizzle with olive oil and lemon juice, and sprinkle with salt to taste. Toss gently to combine.

For the Tzatziki Sauce

    Prepare the Cucumber

    Grate the cucumber and squeeze out excess moisture using a clean kitchen towel.

    Mix the Sauce

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt to taste. Stir well until smooth.
