Prepare the Potatoes

Wash and Boil
Rinse the baby potatoes under cold water to remove any dirt. Place them in a pot, cover with water, and add 1 tsp of salt. Bring to a boil and cook for 15-20 minutes or until tender.

Drain and Cool
Once cooked, drain the potatoes and let them cool for a few minutes. You can optionally peel them if you prefer, but leaving the skin on adds flavor and texture.
Prepare the Truffle Oil Dressing

Mix the Dressing
In a small bowl, combine 2 tbsp of truffle oil, 1 tbsp of olive oil, 2 tbsp of chopped fresh parsley, 1 minced garlic clove, and 1 tbsp of lemon juice. Whisk together until well blended.
Combine and Serve

Toss the Potatoes
In a large bowl, add the cooked potatoes and pour the truffle oil dressing over them. Toss gently to coat the potatoes evenly.

Sprinkle 50g of grated Parmesan cheese and 2 tbsp of chopped fresh chives over the dressed potatoes. Toss lightly to combine.
