Meatballs

Method

Meatballs Preparation

  1. 1

    Mix Ingredients

In a large bowl, combine ground pork, ground turkey, breadcrumbs, egg, minced garlic, grated ginger, salt, and black pepper. Mix well until all ingredients are fully incorporated.

  2. 2

    Form Meatballs

Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Place the formed meatballs on a baking sheet lined with parchment paper.

  3. 3

    Bake Meatballs

Preheat the oven to 400°F (200°C). Bake the meatballs for 15-20 minutes or until they are cooked through and golden brown.

Curry Sauce Preparation

  1. 4

    Cook Mushrooms

In a large skillet over medium heat, add a splash of oil. Once hot, add the sliced wild mushrooms and sauté for about 5 minutes until they are tender.

  2. 5

    Add Curry Paste

Stir in the red coconut curry paste and cook for an additional 2 minutes until fragrant.

  3. 6

    Add Coconut Milk

Pour in the coconut milk, stirring well to combine. Bring the mixture to a gentle simmer.

  4. 7

    Combine Meatballs and Sauce

Add the baked meatballs to the skillet, ensuring they are well coated with the curry sauce. Let simmer for another 5 minutes.

Serving

  1. 8

    Plate the Dish

Serve the Thai red curry meatballs hot, garnished with sliced candied Fresno chiles, chopped cilantro, and spiced peanuts.
