Prepare Sushi Rice

Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the rice cooker instructions.

Season the Rice
Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved. Pour over the rice and gently fold to combine. Allow to cool to room temperature.
Prepare Tempura Spicy Tuna

Make the Spicy Tuna Mix
In a medium bowl, combine diced tuna, Sriracha, and mayonnaise. Mix until well combined and set aside.

Prepare Tempura Batter
In a separate bowl, mix the tempura batter mix with cold water until smooth.

Fry the Spicy Tuna
Heat vegetable oil in a deep frying pan over medium heat. Dip spoonfuls of the spicy tuna mix into the tempura batter and carefully drop into the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
Assemble the Roll

Prepare the Nori
Lay a sheet of nori on a bamboo sushi mat, shiny side down.

Add Sushi Rice
Wet your hands with water to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving a small border at the top.

Add Fillings
Layer the cream cheese, jalapeño slices, avocado slices, fried spicy tuna, crunch, and green onions in the center of the rice.

Roll the Sushi
Using the sushi mat, carefully roll the nori away from you, pressing gently to form a tight roll. Seal the edge with a little water.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Serve with ponzu and sweet chili sauce for dipping.
