Wash the Russet potatoes thoroughly under cold running water to remove any dirt. Using a sharp knife or a mandoline slicer, slice the potatoes into thin rounds, about 1/8-inch thick. Place the sliced potatoes into a large bowl of cold water to prevent them from browning.

After slicing, drain the potatoes and pat them dry with paper towels or a clean kitchen towel. Ensure that the potato slices are as dry as possible to avoid excess splatter when frying.
