Roast the Beets
Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and place them on a baking sheet. Roast in the oven for about 45-60 minutes, or until tender when pierced with a fork. Allow to cool, then peel and dice into bite-sized pieces.

Prepare the Salad Base
In a large bowl, combine the artisan lettuce, diced roasted beets, and crumbled goat cheese. Add the candied pecans and orange supremes, set aside.
Citrus Vinaigrette Preparation

Make the Vinaigrette
In a small bowl, whisk together the olive oil, fresh orange juice, fresh lemon juice, honey, salt, and black pepper until well combined and emulsified.

Combine and Serve
Drizzle the citrus vinaigrette over the salad mixture and toss gently to combine. Serve immediately, garnished with additional goat cheese and pecans if desired.
