Method
Parsnip Puree

Prepare the Parsnips
Peel and chop the parsnips into small pieces.

Cook the Parsnips
In a pot, add chopped parsnips, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.

Puree the Parsnips
Drain the parsnips and return them to the pot. Add heavy cream, butter, salt, and black pepper. Use an immersion blender or a food processor to puree until smooth.

Brown Butter

Brown the Butter
In a small saucepan, melt the butter over medium heat. Continue cooking until it turns golden brown and has a nutty aroma. Be careful not to burn it.
Candied Sweet Potato

Prepare Sweet Potatoes
In a pot, add cubed sweet potatoes and cover with water. Bring to a boil and cook until tender, about 10-15 minutes.

Candy the Sweet Potatoes
Drain the sweet potatoes and return them to the pot. Add butter, brown sugar, cinnamon, and salt. Stir over low heat until the sweet potatoes are glazed and caramelized.
Roasted Pecans

Roast the Pecans
Preheat the oven to 350°F (175°C). Toss the pecans with olive oil and salt, spread on a baking sheet, and roast for 10-12 minutes until fragrant and lightly browned.

Prepare the Scallops
Pat the scallops dry with paper towels and season with salt and black pepper on both sides.

Sear the Scallops
In a large skillet, heat olive oil over medium-high heat. Add the scallops, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side until golden brown and cooked through.

Plate the Dish
On each plate, spread a layer of parsnip puree, top with seared scallops, add chorizo & apple relish, candied sweet potatoes, and garnish with roasted pecans and micro cilantro.
