Cake Preparation

    Melt Chocolate and Butter

    Preheat your oven to 200°C (390°F). In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in short bursts, stirring until smooth.

    Combine Sugar and Eggs

    In another bowl, whisk together the granulated sugar and eggs until the mixture is pale and slightly thickened.

    Mix Ingredients

    Gently fold the melted chocolate mixture into the egg and sugar mixture. Add the vanilla extract and a pinch of salt. Sift the all-purpose flour over the mixture and gently fold until just combined.

    Prepare Ramekins

    Grease four ramekins with butter and dust with cocoa powder to prevent sticking. Pour the batter evenly into the ramekins, filling them about 2/3 full.

    Bake

    Bake in the preheated oven for about 12-15 minutes until the edges are set but the center is still soft. Remove from the oven and let them sit for 1-2 minutes.

    Serve

    Carefully invert the ramekins onto plates and let them sit for a few seconds before lifting the ramekins. The molten center should flow out.

Salted Caramel Sauce Preparation

    Make Caramel

    In a medium saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar dissolves, then let it cook without stirring until it turns a deep amber color.

    Add Cream and Butter

    Remove the saucepan from heat and carefully add the heavy cream and butter, whisking constantly until smooth. Stir in the sea salt.

    Cool

    Allow the caramel to cool slightly before drizzling over the warm molten cakes.

Candied Pecans Preparation

    Prepare Sugar Mixture

    In a small saucepan, combine granulated sugar, water, and cinnamon. Stir over medium heat until the sugar dissolves.

    Candy the Pecans

    Add the pecan halves to the saucepan and cook over medium heat, stirring constantly until the mixture thickens and the nuts are coated.

    Cool and Serve

    Spread the candied pecans on a baking sheet lined with parchment paper to cool. Once cool, sprinkle them over the molten cakes before serving.
