Preparation of Orange Essence

    Prepare the Orange Peels

    Using a vegetable peeler, carefully remove the zest from the oranges, avoiding the bitter white pith. Cut the peel into thin strips to maximize flavor extraction.

    Make the Simple Syrup

    In a medium saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Allow to cool slightly.

    Infuse the Orange Peel

    Add the prepared orange peel to the saucepan with the simple syrup. Let the mixture simmer on low heat for about 20 minutes, stirring occasionally.

    Mix with Neutral Spirit

    Remove the saucepan from heat and allow to cool. Once cooled, pour the syrup and orange peel mixture into a large glass jar. Add the neutral spirit and seal the jar tightly.
