Method

Pork Chop

    Season the Pork Chops

    Rub the double bone pork chops with salt, black pepper, and olive oil. Sprinkle fresh thyme over the chops.

    Sear the Pork Chops

    In a preheated oven-safe skillet, sear the pork chops over medium-high heat for about 4-5 minutes on each side until golden brown.

    Roast the Pork Chops

    Transfer the skillet to a preheated oven at 400°F (200°C) and roast for 12-15 minutes or until the internal temperature reaches 145°F (63°C). Let rest before serving.

Roasted Root Vegetable Hash

    Prepare the Vegetables

    Dice the carrots, parsnips, sweet potatoes, and red onion into small, even pieces.

    Toss and Roast

    In a large bowl, toss the diced vegetables with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven at 400°F (200°C) for 25-30 minutes, stirring halfway through, until tender and caramelized.

Celery Root Puree

    In a pot, cover the cubed celery root with water and bring to a boil. Cook until tender, about 20 minutes.

Cranberry Butter

Apple Cider Jus

    In a saucepan, combine apple cider, chicken stock, fresh thyme, salt, and pepper. Bring to a boil and then reduce to a simmer for 15-20 minutes until slightly thickened.
