Husk the fresh corn on the cob and remove all silk. Preheat your wood fire grill to medium-high heat.

Mix Ingredients
In a bowl, combine crème fraîche, lime juice, and lime zest. Stir until well mixed and creamy. Set aside.
Assembling the Dish

Cut the Corn Off the Cob
Once the corn has cooled, carefully cut the kernels off the cob using a sharp knife and place them in a serving bowl.

Add chopped cilantro, crumbled cotija cheese, and chile pequin to the corn mixture. Drizzle with mayonnaise and mix gently.
