Prepare the Cauliflower
Preheat your oven to 375°F (190°C). Remove the leaves and stem from the cauliflower, and cut it into florets. Bring a large pot of salted water to a boil and blanch the cauliflower florets for about 5 minutes until slightly tender. Drain and set aside.

Prepare the Cheese Sauce
In a saucepan over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the flour and cook for another minute, stirring constantly. Gradually whisk in the milk and continue to stir until the mixture thickens, about 5-7 minutes. Remove from heat and stir in the cheddar cheese, 0.5 cups of parmesan cheese, salt, black pepper, and nutmeg until smooth.

Combine Cauliflower and Cheese Sauce
In a large mixing bowl, combine the blanched cauliflower florets with the cheese sauce. Mix well to coat the cauliflower thoroughly.

In a small bowl, mix the breadcrumbs, 0.25 cups of parmesan cheese, and melted butter (1 tablespoon) until combined.

Transfer the cauliflower and cheese mixture to a greased baking dish. Sprinkle the breadcrumb topping evenly over the top.
