Method
Marinating Chicken
- 1
Prepare Marinade
In a bowl, mix together the olive oil, paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt to create the marinade.
- 2
Marinate Chicken
Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Roasting Corn
- 3
Preheat Oven
Preheat your oven to 400°F (200°C).
- 4
- 5
Roast Corn
Place the corn on a baking sheet and roast in the preheated oven for about 25-30 minutes, turning halfway through, until the corn is tender and slightly charred.
Cooking Chicken
- 6
Cook Chicken
Heat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is nicely blackened.
- 7
Let Chicken Rest
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
Assembling the Salad
- 8
Prepare the Salad
In a large bowl, combine the mixed salad greens, diced tomatoes, sliced red onion, diced avocado, fried jalapenos, and fried tortilla strips.
- 9
Add Dressing
Drizzle the baja ranch dressing over the salad and toss gently to combine.
Serving
- 10
Serve
Slice the blackened chicken and arrange it on top of the prepared salad. Serve the roasted corn on the side.
