Preparation
Prepare the Crab and Lobster Mixture
In a large mixing bowl, combine the crab meat, lobster meat, diced celery, diced onion, shredded cheese, mayonnaise, salt, and black pepper. Mix well until all ingredients are fully combined.
Prepare the Muffins
Preheat your oven to 375°F (190°C). Slice the English muffins in half and place them on a baking sheet, cut side up.
Assemble the Muffins
Evenly distribute the crab and lobster mixture onto each half of the English muffins. Top each muffin with a slice of tomato.
Bake
Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly, and the edges of the muffins are golden brown.
Serve
Remove from the oven and let cool for a minute. Serve open-faced, accompanied by fries or coleslaw. For the soup option, serve one muffin with New England Clam Chowder or Seafood Cioppino.
