In a bowl, toss the tiger shrimp with blackening seasoning until evenly coated. Heat a skillet over medium-high heat and add a tablespoon of oil. Cook the shrimp for 2-3 minutes on each side until cooked through and blackened. Remove from heat and set aside.

Cooking the Rice Noodles

Prepare the rice noodles according to package instructions. Drain and set aside.

Mixing the Filling

In a large bowl, combine the cooked shrimp, julienned carrots, shredded cabbage, and sliced onion. Gently toss to combine.

Making the Mango Chutney

In a small bowl, mix together diced mango, red onion, cilantro, lime juice, brown sugar, and salt. Adjust seasoning to taste.

Take a romaine lettuce leaf and fill it with the shrimp mixture, top with rice noodles, and drizzle with mango chutney. Serve immediately.
