Prepare the Base

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

Sauté Vegetables

Add butter to the pot with the bacon drippings. Sauté the onions and celery until soft, about 5 minutes. Add garlic and cook for an additional minute.

Add Potatoes and Clam Juice

Stir in the diced potatoes, clam juice, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.

Incorporate Clams and Cream

Add the clams and heavy cream to the pot. Cook on low heat for about 5-10 minutes until heated through. Adjust seasoning as necessary.

Serve

Ladle the clam chowder into bowls and top with crumbled bacon, cheddar jack cheese, and chopped scallions if desired. Serve with oyster crackers or your choice of bread.
