Prepare the Halibut

Preheat your oven to 375°F (190°C). Place halibut fillets on a baking sheet lined with parchment paper.

Make the Topping

In a bowl, combine chopped sun-dried tomatoes, basil, parsley, minced garlic, olive oil, lemon juice, salt, and black pepper. Mix well.

Top the Halibut

Spread the sun-dried tomato mixture evenly over the halibut fillets.

Bake the Fish

Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.

Cook the Wild Rice

While the halibut is baking, cook the wild rice according to package instructions.

Sauté the Vegetables

In a skillet, sauté the mixed vegetables in a little olive oil until tender.
