Prepare the Mushrooms

Clean the button mushrooms by wiping them with a damp cloth. Remove the stems if desired and set aside.

Make the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk together until well mixed. Gradually add the cold sparkling water to the dry ingredients, stirring until the batter is smooth and has a thick consistency.

Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it’s ready.

Fry the Mushrooms

Dip each mushroom into the batter, ensuring it is fully coated. Carefully drop the battered mushrooms into the hot oil in batches, making sure not to overcrowd the pan. Fry until golden brown, about 3-4 minutes, turning them occasionally for even cooking.

Drain and Serve

Using a slotted spoon, remove the fried mushrooms from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
