Preparation

1. Prepare Cajun Spice Mix

In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and black pepper. Mix well.

2. Season the Fish

Rub the Cajun spice mix generously over both sides of the salmon or halibut fillets.

3. Cook Wild Rice

In a pot, combine wild rice, water or broth, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes or until tender. Fluff with a fork.

4. Sauté Vegetables

In a pan, heat 1 tablespoon of olive oil over medium heat. Add bell peppers and zucchini. Season with salt and pepper. Sauté for about 5-7 minutes until tender.

5. Blacken the Fish

In another pan, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the seasoned fish fillets. Cook for about 3-4 minutes on each side until blackened and cooked through. Adjust cooking time based on the thickness of the fillets.

Serving

6. Plate the Dish

Serve the blackened fish alongside a portion of wild rice and sautéed vegetables.
