Prepare and season

Remove the foie gras from the refrigerator 20–30 minutes before cooking so it reaches near room temperature. Gently separate the lobes and carefully remove any visible veins or blood spots with the tip of a small knife — do not overwork the liver. Pat dry thoroughly with paper towel. Sprinkle evenly with the fine sea salt, sugar and white pepper. Drizzle the cognac over both sides and gently press to adhere. Let sit for 10 minutes.

Portion

Using a sharp knife warmed under hot water and dried, slice the foie gras into 8 equal portions of approximately 50 g (about 1/2 inch / 1.2 cm thick medallions). Wipe the knife between cuts to keep neat edges.

Pan and finishing

Preheat pan

Place a large heavy skillet (preferably cast iron or stainless steel) over medium-high heat. Add the neutral oil and allow it to shimmer — this helps prevent the butter from burning.

Sear

Reduce heat slightly to medium-high (so the exterior browns without exploding fat). Add 2–3 foie gras medallions to the pan, leaving space between pieces. Sear undisturbed for 30–45 seconds until a deep golden-brown crust forms. Flip and sear the other side 20–30 seconds. The interior should remain soft; total cook time per piece is about 60–90 seconds. Transfer to a plate lined with paper towel to rest and drain any excess fat. Repeat with remaining medallions.

Finish

Return the pan to medium heat and add the unsalted butter to the remaining fond; swirl briefly to melt and pick up any browned bits. If desired, deglaze with the remaining 1 teaspoon cognac (careful if flambéing). Spoon a little of the butter-pan juices over each foie gras piece just before plating.

Toast bread

While searing, toast the brioche slices in a separate dry skillet or under a broiler until golden and crisp on both sides, about 1–2 minutes per side, taking care not to burn them.

Season and garnish

Place two foie gras medallions on each toasted brioche slice (or one large piece per slice). Sprinkle lightly with flake sea salt and a crack of freshly ground black pepper if desired. Add a small quenelle or spoonful (~1½ tbs) of pear/fig compote alongside and top with a few microgreens. Drizzle a small amount (about 1 tsp) of balsamic glaze over the compote or plate for contrast.

If making quick compote

If you prefer to make a quick compote: finely dice 2 ripe pears or 6 figs. In a small saucepan over medium heat combine fruit, 1 tbs sugar, 1 tbs water and a squeeze of lemon juice. Simmer gently, stirring occasionally, until soft and slightly jammy, about 8–10 minutes. Cool slightly before serving alongside the foie gras.
