Take the cheeses out 30 minutes before serving to come to room temperature. Cut the Manchego/Comté into 1/2-inch wedges. Score the rind of the Brie if desired and cut a wedge for serving. Place cheeses spaced around the board, balancing the heavier meats with the cheese positions to encourage guests to move around the board.
