Prepare glass

If desired, place coarse salt on a small plate. Run a lime wedge around the rim of a highball or Collins glass, then dip the rim into the salt to coat. Fill the glass with ice and set aside.

Mix base

In a cocktail shaker filled with ice, combine 2 oz blanco tequila, 0.5 oz fresh lime juice, 3 oz house grapefruit skinny juice, and 0.25 oz agave syrup if you want a touch more sweetness. Shake vigorously for 8–10 seconds until well chilled.

Add orange liqueur

Strain the shaken mixture into the prepared ice-filled glass. Float or gently pour 0.5 oz Cointreau over the top so it layers lightly.

Top with sparkling water

Top the drink with roughly 2 oz sparkling water (or grapefruit sparkling water for extra flavor). Give the glass a gentle stir once or twice to integrate, taking care not to lose too much effervescence.

Garnish and serve

Garnish with a grapefruit wedge or wheel and a lime wedge. Serve immediately with a straw or stirring stick. Adjust sweetness with additional agave if desired.
