Prep Vegetables & Ham

Dice

Peel and finely dice the white onion until you have about 1/4 cup. Core, seed, and finely dice the green bell pepper to yield about 1/4 cup. If your ham is in larger pieces, dice or chop it to make about 1/2 cup small, bite-sized pieces.

Beat Eggs

Crack the 3 large eggs into a medium bowl. Add 1 tablespoon milk, 1/4 teaspoon kosher salt, and 1/8 teaspoon freshly ground black pepper. Whisk vigorously until the mixture is uniform and slightly frothy (about 30 seconds).

Cook Vegetables & Ham

Heat a nonstick or well-seasoned 8-inch skillet over medium heat. Add 1 teaspoon vegetable oil and 1 tablespoon unsalted butter. When the butter is melted and foaming but not browned, add the diced onion and green pepper. Sauté, stirring occasionally, until the onion is translucent and the pepper is softened, about 3–4 minutes.

Add the chopped ham to the skillet with the vegetables and cook for 1–2 minutes more, just to warm the ham and let flavors combine. Spread the mixture evenly in the pan and reduce heat to medium-low.

Cook Omelette

Give the beaten eggs a quick whisk again, then pour them evenly over the warmed vegetables and ham in the skillet. Tilt the pan if needed so the eggs coat the surface. Let the eggs set undisturbed for about 20–30 seconds.

Using a spatula, gently lift the edges of the omelette to allow any uncooked egg to run underneath. Continue cooking on medium-low until the top is mostly set but still slightly glossy (about 45–60 seconds more).

Sprinkle the 1/2 cup 3-cheese blend evenly over one half of the omelette. Allow the cheese to melt for 20–30 seconds.

Carefully fold the omelette in half over the cheese and vegetables using a spatula. Let it cook another 15–20 seconds to ensure cheese is melted through and omelette is fully set but still tender.

Finish & Serve

Slide the folded omelette onto a plate. Taste and adjust seasoning with a pinch more salt and pepper if needed. Sprinkle optional chopped fresh chives or parsley on top.

Serve immediately while hot. This recipe yields one hearty serving; pair with toast or a side salad if desired.
