General Notes
This recipe supports 1–4 eggs. Adjust quantities proportionally. Use the appropriate sub-section below for the desired style: Over Easy, Over Medium, Over Hard, Over Light, Scrambled, Sunny-Side Up, Poached, or Egg Whites.
Frying / Over (Easy, Medium, Hard, Light) and Sunny-Side Up
Prep
Crack the eggs into small bowls (one bowl per egg) to make transfer to the pan easy and to inspect for shells. If cooking egg whites only, separate yolks and reserve or discard.
Cook eggs (Sunny-Side Up)
Gently slide cracked eggs from their bowls into the skillet, spacing them so they don't touch. Season lightly with salt and pepper. Cook undisturbed for 2–3 minutes, until whites are set but yolks remain runny. For a slightly set top without flipping, cover the pan for 20–30 seconds.
Cook eggs (Over-Medium)
Follow the over-easy method but cook the flipped side 45–60 seconds so the yolk is partially set but still creamy.
Cook eggs (Over-Hard)
After flipping, cook 90 seconds to 2 minutes, or until yolks are fully set. You can press the yolk gently with the spatula if needed to break and encourage full setting.
Cook eggs (Over-Light)
Use lower heat. Cook initial side until whites are mostly set (about 2–3 minutes), flip once, and cook the second side 15–20 seconds — yolk will be slightly runny but more set than over-easy.
Scrambled
Cook
Pour beaten eggs into the skillet. Let them sit without stirring for about 10–15 seconds, then with a silicone spatula gently sweep from the edges toward the center, forming large soft curds. Continue folding every 10–15 seconds until eggs are mostly set but still slightly moist (about 1½–3 minutes depending on quantity). Remove from heat slightly before fully set — carryover heat will finish them.
Serve immediately. Season to taste and garnish if desired.
Poached Eggs
Prep poaching liquid
Pour 4 cups of water into a medium saucepan and bring to a gentle simmer over medium heat. Add 1 tablespoon white vinegar and a pinch of salt. Vinegar helps the egg whites coagulate.
Create vortex & add egg
Reduce heat so water is at a gentle simmer with small bubbles (not a rolling boil). Stir water briskly in one direction to create a mild vortex. Crack one egg into a small cup and gently slide it into the center of the vortex. Repeat for additional eggs, spacing them and using a larger pan if needed (avoid overcrowding).
Season and serve immediately. Trim any stray thin whites if desired and garnish.
Egg Whites Only
Preparation
Separate yolks from whites and place the desired number of whites in a bowl. Season with a pinch of salt and pepper. Whisk lightly to combine.
Serve hot and season to taste.
