Beat eggs

Crack 3 large eggs into a bowl. Add 2 tablespoons whole milk, 1 teaspoon salt and 1 teaspoon black pepper. Whisk until mixture is uniform and slightly frothy.

Cook eggs

Heat a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt and foam but not brown. Pour in the egg mixture. Let sit for 10–15 seconds until edges set, then using a silicone spatula gently push cooked edges toward center, tilting the pan to let uncooked egg flow underneath. Continue folding every 10–15 seconds until eggs are softly set but still moist, about 2–3 minutes total. Remove from heat a touch early as they will continue to cook in the residual heat.

Toppings (choose and prepare)

While eggs cook, prepare chosen toppings: warm cooked sausage or bacon if using; shred cheese; slice avocado and green onions; rinse and roughly chop spinach; dice tomatoes and remove excess juice. Measure toppings into small bowls so they are ready to assemble. If you like hot sauce or sour cream, have those on hand.

If you prefer melted cheese, sprinkle shredded cheddar over the hot eggs in the pan for 30–60 seconds after removing from heat so it softens.

Assemble & Roll

Warm 1 large flour tortilla for 10–15 seconds in a dry skillet or 8–10 seconds in the microwave covered with a damp paper towel until pliable. Lay tortilla flat on a clean surface.

Place the scrambled eggs in a loose line across the center of the tortilla leaving about 2 inches of space at each end.

Layer chosen toppings evenly over the eggs: about 2 tablespoons shredded cheese, 2 tablespoons cooked sausage or bacon (if using), 2 tablespoons diced tomato, 1–2 tablespoons chopped spinach, 1–2 tablespoons sliced avocado, and 1 tablespoon sliced green onions as desired. Add hot sauce and/or sour cream to taste.

Fold the short sides of the tortilla in toward the center about 1/2 inch, then fold one long side over the filling and roll tightly away from you until seam-side down. If needed, place seam side down in a lightly heated skillet for 30–60 seconds to seal and warm through.

Slice the roll-up in half on the bias and serve immediately.
