Cook sausage

Heat 1 teaspoon of oil in a nonstick skillet over medium heat. Add the bulk breakfast sausage, breaking it up with a spatula or wooden spoon. Cook, stirring and crumbling, until browned and cooked through, about 5–6 minutes.

Add aromatics and salsa

Push the cooked sausage to one side of the skillet, or remove excess fat if there is a lot (leave a little for flavor). Add the finely diced onion and cook for 1–2 minutes until softened. Stir the onion into the sausage, then add 1/4 cup salsa and 1 tablespoon chopped cilantro. Cook 30–60 seconds until warmed and combined. Taste and adjust seasoning if needed. Remove the sausage-salsa mixture to a small bowl and set aside.

Whisk eggs

In a bowl, crack 3 large eggs. Add 2 tablespoons whole milk, 1 teaspoon kosher salt, 1 teaspoon freshly ground black pepper, 1 teaspoon ground cumin, and 1 teaspoon chili powder. Whisk vigorously until the mixture is uniform and slightly frothy, about 20–30 seconds.

Preheat skillet

Wipe the skillet clean and return to medium-low heat. Add 1 tablespoon butter and allow it to melt, swirling to coat the pan evenly. The pan should be hot but not smoking — you want a gentle sizzle when the eggs hit the surface.

Cook eggs

Pour the whisked eggs into the skillet. Let them sit undisturbed for about 15–20 seconds until the edges begin to set. With a spatula, gently push set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Continue until eggs are mostly set but still slightly creamy on top, about 1–2 minutes total (lower heat if browning too quickly).

Add sausage and cheese

Evenly distribute the reserved sausage-salsa mixture over one half of the almost-set omelette. Sprinkle the 3 ounces of three-cheese blend evenly over the sausage.

Fold and finish cooking. Use a spatula to gently fold the empty half of the omelette over the filled half to create a half-moon. Let cook for another 30–60 seconds to melt the cheese and finish cooking the eggs, keeping the inside moist but set. If needed, cover the pan briefly (15–20 seconds) to help cheese melt without overcooking the eggs.

Plate and garnish. Slide the omelette onto a plate. Garnish with extra chopped cilantro, sliced or pickled jalapeño, and a lime wedge on the side. Serve immediately.
