Par-cook and crisp

Place a medium nonstick or cast-iron skillet over medium heat. Add 1 tsp oil and let warm 30 seconds. Add the diced potatoes (1/2 cup) and chopped onion (1 tbsp) in a single layer if possible. Season with 1/8 tsp salt, 1/8 tsp paprika and 1/16 tsp black pepper. Cook without moving for 3 minutes to brown the underside, then stir or flip pieces. Continue to cook, stirring every 2 minutes, until potatoes are tender and golden, about 8–10 minutes total. Reduce heat if potatoes brown too quickly. Transfer to a warm plate and keep warm while you finish the rest.

Bacon (pan-fry)

Use the same skillet (wipe excess oil if smoking) or a separate cold skillet. Lay 2 bacon strips in the cold pan and place over medium heat. Cook 3–6 minutes, flipping occasionally, until desired crispness is reached. Transfer to a paper towel-lined plate to drain. If you prefer chewier bacon, cook shorter; for crispier bacon, cook longer.

Sausage (pan-cook)

Heat 1 tsp oil in a skillet over medium heat. Add 1 breakfast sausage link or patty and cook 3–5 minutes per side (6–10 minutes total) until browned and cooked through (internal temperature 160°F/71°C for pork). Reduce heat if it browns too fast. Transfer to plate and keep warm.

Prepare egg any style

Decide fried, scrambled, or poached. For a fried egg: heat 1 tsp butter or oil in a small nonstick skillet over medium-low. Crack 1 egg into a small bowl, then gently slide into the pan. Season with 1/8 tsp salt and a pinch (1/16 tsp) black pepper. Cook until whites are set—about 2–3 minutes for sunny-side up. For over-easy/medium/ hard, flip gently and cook 20–30 seconds (over-easy), 45–60 seconds (over-medium), or 90 seconds (over-hard). For scrambled: whisk egg with salt and pepper, melt butter in skillet, pour in egg, stir gently until soft curds form, about 1–2 minutes. For poached: bring 2 inches of water to a gentle simmer with 1 tsp vinegar, create a whirlpool, drop cracked egg into water and cook 3 minutes for a runny yolk, then remove with a slotted spoon.

Toast

Toast 1 slice of bread to desired darkness using a toaster or under a broiler. Spread 1 tsp butter while warm. If making toast in a skillet, butter one side and toast buttered side down in a medium skillet over medium heat until golden, about 2 minutes.

To serve

Arrange the plate: place the cooked potatoes (about 1/2 cup) on the plate, add the cooked bacon (2 strips) or sausage (1 link) next to potatoes, place the toast and buttered side up, and top the plate with the cooked egg. Serve immediately while hot. Offer ketchup or maple syrup on the side if desired.
