Prepare the peppers

Wash the jalapeños and pat dry. Wearing gloves (recommended), trim off the stem ends. Slice the peppers into 1/8–1/4-inch rounds; for milder heat, remove and discard some or all seeds and membranes as you slice. Place sliced jalapeños in a clean heatproof jar (about 16–20 oz capacity) leaving about 1/2 inch headspace.

Prep aromatics

Peel and lightly crush the garlic cloves with the flat of a knife. Add the garlic, black peppercorns, oregano, and bay leaf into the jar with the jalapeños, tucking them among the slices so flavors distribute evenly.

Make the brine

In a small saucepan combine the distilled white vinegar, water, sugar, and kosher salt. Bring the mixture to a simmer over medium heat, stirring until the sugar and salt dissolve completely. Remove from heat as soon as it reaches a simmer.

Pour and seal

Carefully pour the hot brine over the jalapeños and aromatics in the jar, covering the peppers fully while leaving about 1/4–1/2 inch headspace. Use a clean spoon to press the slices down and release any trapped air bubbles. If desired, pour a teaspoon of neutral oil on top to help seal and reduce surface oxidation.

Cool and refrigerate

Let the jar cool to room temperature (about 30–45 minutes). Wipe the rim clean, close with a lid, and refrigerate. The pickled jalapeños will be ready to eat after 24 hours but taste improves after 48 hours. Store refrigerated for up to 4–6 weeks.

Hot-water canning option (for shelf-stable)

If you want shelf-stable jars, use proper canning procedures: fill hot jars with sliced jalapeños and hot brine leaving 1/2-inch headspace, remove air bubbles, wipe rims, seal with lids, and process in a boiling-water bath for 10 minutes (adjust for altitude). Follow USDA canning guidelines precisely.

Use pickled jalapeños on tacos, nachos, sandwiches, burgers, or chopped into salsas. Drain before using if you prefer less liquid. Garnish finished dishes with lime juice and chopped cilantro as desired.
