Method
Chorizo & Tortillas
Cook chorizo
Heat a large nonstick or cast-iron skillet over medium heat. Add the ground chorizo (no additional oil needed if chorizo is fatty; otherwise add 1 tbs oil). Break it up with a spatula and cook, stirring occasionally, until fully browned and crisped in places, about 6–8 minutes. Use the spatula to break into small crumbles. Transfer cooked chorizo to a bowl and reserve 1 tbs of rendered fat in the skillet; drain any excess.
Griddle tortillas
Wipe skillet if needed to remove burnt bits, then return to medium heat. Add the 2 tbs vegetable oil and heat until shimmering. Add one tortilla at a time and griddle for 30–45 seconds per side, until lightly crisped and golden but still pliable. Keep tortillas warm in a low oven (200°F / 95°C) wrapped in foil while you finish remaining steps. If you prefer extra crispness, press lightly with a spatula while cooking.
Eggs & Cheese
Make scrambled eggs
In a medium bowl, whisk together the 6 eggs, 2 tbs whole milk, 1 tsp salt and 1/2 tsp black pepper until combined and slightly frothy. Melt 1 tbs unsalted butter in a clean nonstick skillet over medium-low heat. Pour in the egg mixture and let sit undisturbed for 10–15 seconds, then gently push the eggs from the edges to the center with a silicone spatula, creating soft curds. Continue folding and stirring until eggs are mostly set but still moist, about 2–3 minutes total. Remove from heat (carryover will finish cooking).
Assemble cheese layer
On each warmed tortilla, sprinkle about 2/3 cup of the 3-cheese blend in an even layer (total 1.5 cups for 4 tortillas). Return the cheese-topped tortillas to the skillet over low heat, cover for 30–45 seconds until the cheese begins to melt and the tortilla underside crisps slightly. Remove from heat.
Add eggs and chorizo
Divide the scrambled eggs evenly among the 4 tortillas, placing the eggs on top of the melted cheese layer. Evenly distribute the cooked chorizo crumbles over the eggs (about 2 oz chorizo per tortilla). If desired, sprinkle a little additional cheese on top of the eggs for extra melt.
Salsa & Garnish
Top and finish
Spoon about 1/4 cup of salsa roja over the eggs and chorizo on each tortilla (total 1 cup). Sprinkle remaining cheese if any small gaps remain and allow residual heat to melt it. Garnish each plate with chopped cilantro, a few pickled jalapeño slices if using, and serve with lime wedges on the side for squeezing over the finished huevos rancheros.
Serve immediately while warm. Optionally offer refried beans, avocado slices, or hot sauce alongside.
