Method
Brewed Coffee
Preheat and prepare equipment
Ensure the coffee brewer (automatic drip, commercial coffee urn, or pour-over setup) is clean. Rinse the filter basket and internal components with hot water. Fill the brewer's reservoir or urn with 1 cup of filtered water and run a quick heat cycle to preheat the brewer, then discard that water.
Measure and grind beans
Measure 0.04 cups (approximately 7–8 grams) of whole beans per 8-oz cup. For a standard strength (1:15 coffee-to-water by weight), grind beans to a medium grind for drip or a medium-coarse for urn-style brewing. If offering both regular and decaf, prepare separate batches and keep them clearly labeled.
Load filter and coffee
Place a paper or reusable filter in the basket or urn filter cone. Add the measured ground coffee into the filter, leveling the bed gently. For an 8-cup batch (64 oz), scale ingredients accordingly: 8 cups water to 0.32 cups coffee (approx. 56–64 g). The per-cup measure above is for single-cup serving.
Brew
Start the brew cycle. For automatic drip, allow the machine to complete extraction (about 5–7 minutes for a full carafe). For an urn, follow manufacturer instructions (usually 10–15 minutes but do not over-extract). Aim for a final beverage temperature of 175–185°F (79–85°C) for best flavor and to remain safely hot without burning.
Maintain and keep hot (bottomless service)
Keep brewed coffee in an insulated airpot, thermal carafe, or on a heated plate at 175–185°F. Replace the brew every 1–2 hours during service to prevent stale or over-extracted flavors. Label carafes clearly as regular or decaf. Refill the brewer with fresh water and grounds for each new batch.
Serving & Add-ins
Pour 8 fl oz (1 cup) of hot brewed coffee into a pre-warmed mug. Offer customers their choice of regular or decaf and the optional add-ins.
Sweetening & spices
Provide sugar, simple syrup, sweetener packets, and ground cinnamon at the service station. Instruct customers to add 1 tsp sugar or 1 tbs simple syrup per cup as a starting point, and to sprinkle up to 1/4 tsp cinnamon if desired.
Refills
For bottomless service, refill mugs from the labeled thermal carafes or airpots. Always use the same type (regular or decaf) requested. If the carafe has been on the heater for more than 2 hours, brew a fresh batch to maintain quality.
Cleaning between batches
After each batch or every 2 hours, empty and rinse the carafe and filter basket. Wipe the brewer and flush the hot water line to prevent buildup and off-flavors. Refill with fresh filtered water and fresh grounds for the next brew.
