Prep
Dice the cooked ham into small, approximately 1/4-inch pieces. Finely dice the green bell pepper and the yellow onion. Shred or thinly slice the cheeses and mix them together to form the 3‑cheese blend.
Crack the eggs into a medium bowl, add the milk, salt, and pepper. Whisk thoroughly until yolks and whites are fully combined and slightly frothy (about 20–30 seconds).
Cook filling
Add the diced onion and green bell pepper. Sauté, stirring occasionally, until softened and translucent, about 3–4 minutes.
Cook omelette
Reduce heat to medium-low and add 1 tablespoon butter to the same skillet. Swirl to coat the pan and melt the butter without browning.
Evenly spread the warmed ham, peppers, and onions over one half of the omelette.
Carefully fold the empty half of the omelette over the filled half using a spatula to create a half-moon. Let cook for another 10–15 seconds to set the fold and ensure heated through.
