Method
Omelette base
Crack 3 large eggs into a medium bowl. Add 2 tablespoons milk, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until yolks and whites are fully combined and mixture is slightly frothy (about 30–45 seconds).
Heat a nonstick skillet (8–10 inch) over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan but not brown the butter.
Pour the egg mixture into the warm skillet. Allow eggs to set gently at the edges for 20–30 seconds. Using a silicone spatula, pull set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Continue this motion until the surface is mostly set but still slightly soft and glossy (about 1–2 minutes). Do not overcook — the omelette should remain tender.
Filling (tomato, mushroom, onion & cheese)
Remove the pan from the heat and stir in the diced tomato and 1 ounce shredded Swiss cheese. The residual heat will soften the tomato and start to melt the cheese slightly. If using, stir in 1 tablespoon finely chopped chives or scallions.
Using a spatula, spoon the filling mixture onto one half of the omelette while the top is still slightly soft. Spread evenly, leaving a small border.
Fold the empty half of the omelette over the filling using the spatula, forming a semi-circle. Cook for 20–30 seconds more to allow the cheese to finish melting and the interior to settle. Slide omelette onto a warm plate.
Toppings (California style)
Prepare avocado topping: scoop out half of a ripe avocado into a small bowl. Mash lightly with a fork, leaving some texture. Stir in 1/2 teaspoon fresh lime juice and 1/8 teaspoon salt. Adjust to taste.
Place a generous spoonful of the mashed avocado on top of the folded omelette, spreading gently across the center.
Top the avocado with a dollop (about 1 tablespoon) of sour cream. Garnish with microgreens or remaining chives/scallions if desired.
Serve immediately while warm. Optionally offer hot sauce or extra lime wedges on the side.
