Prep cream cheese filling
In a medium bowl, beat the softened cream cheese with 3 tablespoons powdered sugar and 1 teaspoon vanilla extract until smooth and spreadable. Stir in 1 teaspoon lemon zest. Fold in 1 cup fresh blueberries gently so they remain mostly whole. Taste and adjust sweetness if desired.
Assemble sandwiches
Lay out 8 slices of Portuguese sweet bread. Divide the cream cheese–blueberry mixture into 4 equal portions and spread each portion evenly on 4 slices, leaving a 1/4 inch border to prevent overflow. Top each with a second slice of bread to form 4 sandwiches. Press gently to seal.

Make egg wash
In a shallow bowl or pie dish, whisk together 4 large eggs, 1 cup whole milk, 1 tablespoon granulated sugar, 1 teaspoon ground cinnamon, and a pinch of salt until homogeneous and slightly frothy.
Soak sandwiches
Preheat a large nonstick skillet or griddle over medium-low to medium heat and add 1 tablespoon of the butter to melt. Working one sandwich at a time, hold the sandwich at one end and dip each face into the egg wash for about 3–4 seconds per side (do not fully submerge; the goal is to coat the exterior without saturating the bread). Let excess drip back into the bowl and transfer to the preheated skillet. Repeat with remaining sandwiches, adding the remaining tablespoon of butter between batches if needed.
Cook until golden
Cook the sandwiches 3–4 minutes per side, adjusting heat as needed so the exterior becomes deep golden brown while the interior filling warms and the blueberries inside soften but do not burst completely. Press lightly with a spatula for even contact. Internal temperature should reach about 135–140°F (57–60°C) if measured; if not, rely on visual cues and gentle timing.
Finishing & serving
Rest and plate
Transfer cooked stuffed French toast to a wire rack or plate and let rest 1–2 minutes so the filling settles. While resting, dust each sandwich with powdered sugar using a fine sieve.
Serve
Cut each sandwich in half on the diagonal. Serve warm with extra fresh blueberries on the side, lemon wedges if desired, and maple syrup for drizzling. Recommend 1 sandwich (2 halves) per person.
