Buffalo Philly Chicken Recipe

Prepare the Chicken
Season the chicken breast strips with salt and black pepper. Heat 1 tablespoon of olive oil in a grill pan over medium-high heat and grill the chicken strips for about 5-7 minutes or until fully cooked. Remove from heat and set aside.

Sauté Vegetables
In the same pan, add the remaining tablespoon of olive oil. Add the chopped green bell pepper and onion, sautéing for about 3-4 minutes until they are softened.

Combine Ingredients
In a large bowl, mix the grilled chicken strips with the sautéed vegetables and buffalo sauce until well combined.

Assemble the Sandwiches
Slice the Italian rolls lengthwise and place a slice of pepper jack cheese on each half. Spoon the chicken and vegetable mixture onto the bottom half of the rolls, then cover with the top half.

Serve the Buffalo Philly Chicken sandwiches warm, optionally with extra buffalo sauce on the side.
