Prepare the Chicken
Cut the boneless chicken breast into bite-sized pieces and set aside.

Prepare the Breading
In a bowl, mix together flour, cornstarch, salt, black pepper, garlic powder, and onion powder.

Coat the Chicken
Dip each piece of chicken into the egg, then coat with the flour mixture. Ensure each piece is well coated.

Fry the Chicken
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the coated chicken pieces in batches until golden brown and cooked through, about 5-7 minutes per batch.

Toss in Buffalo Sauce
Once the chicken is cooked, remove from oil and drain on paper towels. Toss the fried chicken pieces in buffalo wing sauce until well coated.

Serve
Serve the boneless wings with celery sticks and ranch dressing on the side.
