Cook the Bacon
In a skillet over medium heat, cook the bacon strips until crispy. Remove and drain on paper towels.

Form the Patties
In a bowl, season the ground beef with salt and black pepper. Divide into two equal portions and form into patties.

Cook the Patties
In the same skillet used for the bacon, cook the patties over medium-high heat for about 4-5 minutes per side for medium doneness.

Add Cheese
Place a slice of cheddar cheese on each patty in the last minute of cooking to let it melt.

Assemble the Burger
Toast the brioche buns lightly, then place the patties on the bottom buns, add the bacon strips, and any optional toppings. Top with the other half of the bun.

Serve immediately with your choice of sides.
