    Prepare the Dough

    In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 5-10 minutes until frothy. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours until doubled in size.

    Preheat the Oven

    While the dough is rising, preheat your wood-fired oven to around 800°F (427°C). Make sure you have plenty of dry oak logs to maintain the heat.

    Shape the Pizza

    Once the dough has risen, punch it down and divide it into 2-4 equal portions, depending on desired pizza size. Roll or stretch each portion into a round shape on a floured surface.

    Add Toppings

    Spread a thin layer of tomato sauce over each pizza base, then add slices of fresh mozzarella. Sprinkle with salt and pepper, and finish with fresh basil leaves. Drizzle olive oil on top.

    Cook the Pizza

    Gently transfer the pizza to the hot pizza stone in the wood-fired oven. Cook for about 90 seconds to 2 minutes, or until the crust is golden and the cheese is bubbly.

    Serve

    Remove the pizza from the oven, let it cool for a minute, slice, and serve immediately with more fresh basil and a drizzle of olive oil if desired.
