Cheese preparation

    Trim and freeze

    If using full-size mozzarella sticks, cut them in half crosswise to make 12 appetizer-sized sticks (if not already pre-portioned). Place the mozzarella sticks on a parchment-lined tray in a single layer and freeze uncovered for at least 30 minutes (preferably 1 hour). Freezing firms the cheese so it releases less melted cheese during frying.

    Set up stations

    Arrange three shallow bowls or pie plates: 1) flour, spread evenly; 2) eggs and milk whisked together; 3) breadcrumb mixture. In the breadcrumb bowl combine breadcrumbs, grated Parmesan, Italian seasoning, garlic powder, onion powder, kosher salt, and black pepper; mix thoroughly.

    Optional starch slurry

    If using cornstarch slurry for extra sealing, whisk the cornstarch with 2 tablespoons water until smooth and keep near the other stations.

    Dredge the cheese sticks

    Working one at a time, roll a frozen mozzarella stick in flour, shaking off excess. Dip into the egg wash until fully coated, then press into the breadcrumb mixture to coat all sides. For a sturdier double-coat: return the breaded stick to the egg wash quickly, then press into breadcrumbs again. Place breaded sticks on a parchment-lined tray and return to the freezer for at least 20–30 minutes to firm the coating. If using the cornstarch slurry, dip the flour-dredged stick briefly into the slurry before egg wash to help the coating adhere better.

Frying

    Heat the oil

    Pour oil into a heavy, deep skillet or Dutch oven to a depth of about 2–3 inches (roughly 4–6 cups depending on pan size). Heat oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb — it should sizzle and brown steadily without smoking.

    Fry in batches

    Fry the frozen, breaded mozzarella sticks in small batches (3–4 at a time) for 45–60 seconds per batch or until golden brown. Do not overcrowd the pan; overcrowding drops oil temperature and increases the chance of rupture. Use a slotted spoon or spider to turn if needed. Remove to a paper towel–lined tray to drain. If the oil temperature falls below about 320°F, let it recover to 350°F before the next batch.

    Avoid overcooking

    Do not fry longer than 60–75 seconds; overcooking will make the cheese burst out. The goal is a crisp, golden crust with melted interior.

Finishing & serving

    Transfer drained mozzarella sticks to a warmed serving plate. Serve immediately with warm marinara sauce for dipping. Suggestion: garnish marinara with a sprinkle of Parmesan and chopped parsley if desired.
