Bring steak to room temperature
Remove the ribeye from the refrigerator and leave it on a plate, loosely covered, for 30–45 minutes (or at least 20 minutes) so the center warms slightly. Pat both sides dry with paper towels.

Check doneness
Use an instant-read thermometer: 120–125°F for rare, 130–135°F for medium-rare, 140–145°F for medium. For a 1"–1.25" ribeye, total cook time after searing both sides will typically be 5–7 minutes depending on heat and thickness.

Transfer the steak to a cutting board and tent loosely with foil. Rest for 8–10 minutes (minimum 5) so juices redistribute; carryover will raise temperature a few degrees.
