    Prepare vegetables

    Wash and dry the spring mix thoroughly using a salad spinner or clean kitchen towel; transfer to a large serving bowl. Rinse tomatoes and cucumber. Chop the tomatoes into 1/2-inch pieces (about 2 cups). Peel (optional) and slice the cucumber into 1/4-inch half-moons (about 1 cup). Thinly slice the red onion into rings or half-rings; separate the rings to keep pieces small (about 1 cup).

    Assemble salty components

    Pit the Kalamata olives if not pitted and halve them if large (about 3 oz). Slice the pepperoncini into thin rounds (about 6 pieces). Crumble or cube 4 oz feta into bite-size pieces. Add the tomatoes, cucumber, red onion, olives, and pepperoncini to the bowl with spring mix.

    Season salad base

    Sprinkle 1 tsp dried oregano evenly over the assembled salad and add 0.75 tsp coarse sea salt and 0.5 tsp freshly ground black pepper. Toss gently to combine so seasonings distribute without bruising the greens.

Dressing

    Make dressing

    In a small bowl or jar, combine 6 tbsp extra-virgin olive oil, 3 tbsp red wine vinegar, 1 tbsp fresh lemon juice, 1 clove minced garlic, 0.5 tsp Dijon mustard (if using), 0.25 tsp salt, and 0.25 tsp freshly ground black pepper. Whisk vigorously or close the jar and shake until the dressing emulsifies and becomes slightly thickened (about 20–30 seconds). Taste and adjust acid or salt to preference.

    Dress the salad

    Just before serving, drizzle about two-thirds of the dressing (reserve the remainder to offer on the side) evenly over the salad. Gently toss the salad with salad tongs or clean hands until vegetables are lightly coated and feta is distributed. Add the remaining dressing to individual plates as desired.

    Finish and serve

    Sprinkle the crumbled feta over the top if you did not mix it in earlier and finish with the optional chopped parsley for color. Serve immediately so the greens remain crisp. Provide extra dressing at the table.
