    Prepare chips

    Preheat oven to 375°F (190°C). On a large rimmed baking sheet, spread the tortilla chips into an even layer. Drizzle with 1 tablespoon olive oil, sprinkle 1 teaspoon dried oregano and 1/2 teaspoon kosher salt, and toss gently so chips are lightly coated. Arrange chips back in a single layer.

    Warm chips

    Bake the chips 5 minutes to warm and crisp them and to help the oregano flavor bloom. Remove from oven and keep oven on for melting cheese in next step.

Lamb

    Dress the lamb

    In a small bowl, combine the sliced cooked lamb with 1 tablespoon lemon juice, 1 teaspoon minced garlic, and 1/2 teaspoon black pepper. Toss to coat evenly. This brightens the lamb and warms slightly when returned to the oven.

    If the lamb is chilled, spread it on a small baking sheet and warm in the oven for 3–4 minutes while you prepare cheeses. If already warm, skip warming.

Cheeses & Assembly

    Layer cheeses

    Scatter 1.5 cups shredded mozzarella and 1 cup shredded sharp cheddar evenly over the warmed tortilla chips. Sprinkle 3/4 cup crumbled feta evenly on top.

    Add lamb and melt

    Distribute the dressed lamb slices over the cheese layer. Return the baking sheet to the oven and bake 5–7 minutes at 375°F (190°C), or until cheese is melted and bubbly and lamb is warmed through. Watch carefully so chips don't burn.

Fresh Veggies & Pickles

    Prep vegetables

    While the cheese melts, dice the tomatoes, shred the romaine, slice banana peppers and pepperoncini, and thinly slice red onion if using.

    When the nachos come out of the oven, immediately scatter the diced tomatoes, shredded romaine, banana peppers, pepperoncini, and red onion over the melted cheese so the veggies stay fresh and crisp.

Tzatziki & Garnishes

    Finish with tzatziki and oregano

    Drizzle 3/4 cup tzatziki over the assembled nachos in ribbons or dollops. Sprinkle 1 tablespoon chopped fresh oregano (or 1 teaspoon dried) and optional 1 teaspoon chopped dill on top. Squeeze lemon wedges over portions to taste.

On the side

    Serve immediately with salsa and sour cream on the side for dipping or spooning. If desired, provide extra tzatziki and lemon wedges at the table.
