Combine dry ingredients
In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt until evenly combined.

In a separate medium bowl whisk the egg, milk, melted butter, and vanilla extract until smooth.

Combine wet and dry
Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a spatula until just combined; batter should be slightly lumpy. Do not overmix.

Prepare apples
Peel, core, and dice the apple into small (about 1/4-inch) pieces. Toss the diced apple with the brown sugar, lemon juice, and ground nutmeg in a small bowl until evenly coated. This softens the apples slightly and keeps them from browning.

Fold apples into batter
Gently fold the apple mixture into the pancake batter until distributed evenly. If batter becomes too thick, stir in up to 2 tablespoons of milk to reach a pourable consistency.

Cook pancakes
For each pancake, pour about 1/4 cup of batter onto the hot griddle, spacing pancakes 1-2 inches apart. Cook until bubbles form on the surface and edges look set, about 2 to 3 minutes. Carefully flip and cook the second side until golden and cooked through, about 1.5 to 2 minutes more. Reduce heat slightly if pancakes brown too quickly. Repeat with remaining batter, adding more oil or butter to the griddle as needed.

If making a large batch, keep cooked pancakes warm in a 200°F (95°C) oven on a baking sheet while finishing the rest.
