    Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon black pepper.

    Whisk the eggs and milk vigorously until the mixture is uniformly yellow and slightly frothy (about 30–45 seconds). This incorporates air for a fluffy omelet.

    Preheat pan

    Place a nonstick skillet (8–10 inch) over medium-low to medium heat. Add 1 tablespoon butter and let it melt, swirling to coat the pan. Heat until the butter foams but does not brown.

    Pour the whisked eggs into the center of the pan. Let them sit undisturbed for about 10–15 seconds until edges begin to set.

    Scrape and tilt

    Using a silicone spatula, gently pull the set edges toward the center while tilting the pan to allow the still-liquid egg to flow to the edges. Repeat around the pan until most liquid egg is set but top remains slightly moist (about 45–60 seconds total cooking).

    Sprinkle 1 ounce shredded cheddar evenly over one half of the omelet while the top is still slightly wet so the cheese melts.

    Use the spatula to carefully fold the empty half of the omelet over the cheese-filled half, forming a semi-circle. Let cook for another 15–20 seconds to ensure cheese is melted and interior set but still tender.
