Whisk dry ingredients: In a large bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, 2 tablespoons granulated sugar, and 1 teaspoon fine salt until evenly combined.

Separate eggs: Crack 2 large eggs into a medium bowl and lightly beat until combined.

Combine wet ingredients: In a separate measuring cup or bowl, combine 1 1/2 cups whole milk, the beaten eggs, 1/2 cup melted and cooled unsalted butter, and 1 teaspoon vanilla extract. Whisk to combine.

Make batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Small lumps are okay — do not overmix or batter will become tough.

Rest the batter (optional): Let the batter rest 5–10 minutes at room temperature to hydrate the flour and yield lighter waffles.

Cook waffles: Working with a hot waffle iron, add the recommended amount of batter for your iron (usually 1/2 to 3/4 cup) and close the lid. Cook until steam subsides and the waffle is golden brown and crisp, about 3–5 minutes depending on your iron. Repeat, brushing the iron with a little vegetable oil or melted butter as needed, until batter is used. Keep finished waffles warm on a baking sheet in a 200°F (95°C) oven if making ahead.

Heat the pan: When you have about 5–7 minutes of waffle cooking remaining, place a large nonstick or cast-iron skillet over medium heat and add 1 tablespoon unsalted butter. Swirl to coat and let the butter foam but not brown.

Cook until whites are set around the edges but yolks remain soft, about 3–4 minutes. For over-easy eggs, gently flip each egg and cook 15–30 seconds more. Season each egg with about 1/2 teaspoon salt (divided) and 1/4 teaspoon black pepper (divided) while cooking or immediately after plating.
