    Cook bacon

    Arrange 6 bacon strips in a cold large skillet without overlapping. Turn heat to medium. Cook 6–10 minutes, flipping every 2–3 minutes, until crispness reaches preference. For chewier bacon cook less, for crispier cook longer. Transfer bacon to a paper-towel-lined plate to drain. Reserve 1–2 tablespoons of bacon fat in the skillet for flavor; pour off excess if there is more than 2 tbs.

    If serving links, heat a separate nonstick skillet over medium heat with 1 tbs butter or use reserved bacon fat. Add 4 sausage links and cook 10–12 minutes, turning frequently so they brown evenly and reach an internal temperature of 160°F (71°C). Reduce heat if they are browning too quickly.

    Cook sausage patties (if using)

    If serving patties instead of links, heat 1 tbs butter or use reserved bacon fat in the skillet over medium. Add 4 patties and cook 3–5 minutes per side (depending on thickness) until browned and cooked through to 160°F (71°C). Transfer to a plate and keep warm.

    Fried eggs

    If you want fried eggs, wipe the skillet lightly if needed and add 1 tbs butter over medium-low heat. Crack eggs gently into the skillet, spacing them evenly. Season with a pinch of salt and pepper. For sunny-side-up, cook 2–3 minutes until whites set but yolks remain runny; for over-easy, cook 2 minutes then flip and cook 20–45 seconds more; for over-medium/over-hard cook longer to desired doneness. Remove eggs with a spatula and keep warm with the cooked proteins.

    Scrambled eggs

    For scrambled eggs, crack 4 eggs into a bowl, add 2 tbs milk (optional) and a pinch of salt and pepper. Whisk until combined and slightly frothy. Melt 1 tbs butter in a nonstick skillet over medium-low heat. Pour eggs into the pan and let sit undisturbed 10–15 seconds. Using a spatula, gently push set edges toward the center, allowing uncooked egg to flow out. Continue folding every 10–15 seconds until soft curds form and eggs are just set, about 2–3 minutes. Remove from heat to avoid overcooking.

    Taste a small piece of egg and a piece of sausage or bacon to adjust seasoning. Sprinkle eggs with remaining salt and ½ teaspoon black pepper (adjust to taste). If desired, scatter chopped chives or parsley over the eggs for color and freshness.

    Assemble on plates: place bacon and either links or patties alongside the eggs. Add toast or English muffin if using and serve condiments such as ketchup or hot sauce on the side.
