    If using bacon: cook until crisp in a skillet (pan-fry or bake), drain on paper towels and chop into bite-sized pieces. If using sausage: remove from casings (if needed), crumble and cook in a skillet until browned and cooked through, drain. If using ham: dice into small cubes. Measure and mince/dice all vegetables and shred cheese.

    Crack the eggs into a medium bowl. Add the milk, salt and black pepper. Whisk vigorously until yolks and whites are fully combined and slightly frothy (about 20–30 seconds). This yields a tender, slightly fluffy omelet.

Cook Fillings (if using vegetables)

    Heat a nonstick or well-seasoned 8–10 inch skillet over medium heat. Add 1 tsp butter or 1 tsp oil. Add diced onion and bell pepper and sauté 2–3 minutes until softened. Add mushrooms and cook another 1–2 minutes until moisture has mostly evaporated. Remove vegetables to a plate. If using bacon/sausage/ham that is already cooked, add only to heat briefly with the vegetables; do not overcook.

Cook Omelet

    Wipe the skillet lightly if needed and return to medium-low heat. Add remaining butter (about 2 tsp) and allow it to foam but not brown.

    Pour the egg mixture into the skillet, tilting the pan so the eggs form an even layer. Let the eggs set undisturbed for about 20–30 seconds until the edges begin to set.

    Using a heatproof spatula, gently push the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue for about 30–45 seconds until the top is mostly set but still slightly moist.

    Evenly distribute your chosen protein (bacon, ham, or sausage) and the cooked vegetables across one half of the omelet. Sprinkle shredded cheddar cheese on top of the fillings.

    With the spatula, carefully lift the opposite edge and fold the omelet in half over the fillings. Let cook for another 30–60 seconds to melt the cheese and finish cooking (longer if you prefer firmer eggs).

    Slide the omelet onto a plate, garnish with chopped chives or parsley, and serve immediately.
