Hamburger steak

    Mix and shape

    Place 12 oz ground beef in a bowl. Add 1 tsp salt, 1 tsp black pepper, 1 tsp onion powder and 1 tbsp Worcestershire sauce. Gently mix with your hands or a fork until combined — do not overwork. Form into a single patty about 3/4-inch thick and slightly wider than the planned plate; press a shallow indentation in the center to prevent doming.

    Cook patty

    Heat a large skillet over medium-high heat. Add 1 tbsp vegetable oil and 1 tbsp butter. When butter is melted and foaming and the pan is hot (but not smoking), place the patty in the pan. Cook undisturbed 3.5–4 minutes until a brown crust forms. Flip and cook 3–4 more minutes for medium doneness (adjust 1–2 minutes more for medium-well). Internal temp target: 145–160°F depending on desired doneness.

    Rest

    Remove the patty to a plate and tent loosely with foil to rest while you make the sauce and eggs (resting for 3–5 minutes preserves juices).

    With pan still over medium heat, add 1 tsp butter. Sprinkle 1 tsp flour into the pan juices and whisk for 20–30 seconds to cook the raw flour taste. Slowly add 1 tbsp beef broth while scraping up browned bits. Stir in 1 tsp soy sauce. Simmer 30–60 seconds until slightly thickened. Taste and adjust salt/pepper. Spoon sauce over the rested hamburger steak.

Eggs

    Prepare pan

    Wipe the skillet clean with a paper towel (or use a separate nonstick pan). Reduce heat to medium-low. Add 1 tsp butter and let it melt and foam.

    Cook eggs (sunny-side or over-easy)

    Crack 2 large eggs into a small bowl, then gently slide into the skillet. Season with a pinch of salt and pepper. For sunny-side up: cook undisturbed 2–3 minutes until whites are set but yolks are runny. For over-easy: cook 1.5–2 minutes, gently flip and cook 15–30 seconds more. For firmer yolks, cook longer to desired doneness.

    Finish

    Use a spatula to transfer eggs onto the hamburger steak (or place eggs beside steak). Spoon any remaining pan butter or sauce over eggs if desired. Garnish with chopped parsley.

To serve

    Plate the rested hamburger steak, top with the cooked eggs and spoon pan sauce over the steak. Serve immediately with toast or home fries on the side.
