    Prepare the Vegetables

    Slice the bell peppers and onion into thin strips.

    Sauté the Vegetables

    In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced peppers and onions, season with salt and pepper, and sauté until they are softened and caramelized, about 5-7 minutes. Remove from the skillet and set aside.

    Fry the Bologna

    In the same skillet, add the remaining tablespoon of butter. Add the bologna slices and fry until they are browned and slightly crispy, about 2-3 minutes per side.

    Assemble the Sandwich

    On each slice of brioche, layer the fried bologna, sautéed peppers and onions, and top with shredded cheddar cheese. Place the other slice of brioche on top.

    Grill the Sandwich

    Wipe out the skillet and place the assembled sandwiches back in the skillet over medium heat. Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

    Serve

    Remove the sandwiches from the skillet, cut in half if desired, and serve hot.
