    Prepare the Tenderloin

    Preheat your oven to 300°F (150°C). Rub the beef tenderloin with olive oil, salt, black pepper, and garlic powder. Place it in a roasting pan.

    Slow Roast the Meat

    Roast the tenderloin in the preheated oven for about 1.5 to 2 hours, or until it reaches an internal temperature of 135°F (57°C) for medium-rare. Remove from the oven and let it rest for 15 minutes.

    Slice the Tenderloin

    Once rested, slice the tenderloin thinly against the grain.

    Assemble the Sandwich

    On a slice of schiacciata, layer slices of tenderloin and top with provolone cheese. Add weck sauce to taste. Top with another slice of schiacciata.

    Serve

    Serve the sandwiches warm, optionally toasting them on a skillet for a few minutes for a crispy texture.
